Another great healthy meal to try is low carb chicken parmesan stuffed zucchini boats. They are super easy to make if you want to meal prep your lunch. This is what you will need:

-1 lb. ground chicken

-3-4 large zucchinis

-2 cups marinara sauce

-3 cups shredded mozzarella

-1 cup shredded parmesan

-garlic powder, salt, and pepper

Step one: Preheat your oven to 400 degrees and grease a 9x13 baking dish. Brown ground chicken until it is no longer pink. Add in salt, pepper, and garlic powder to your liking.

Step two: Mix in 2 cups marinara sauce and turn the skillet to low heat so it can simmer and absorb the sauce, so it isn’t too runny.

Step three: Cut your zucchinis in half, lengthwise, cutting off the ends. Use a spoon to carve out the inside.

Step four: Mix in shredded mozzarella and parmesan. Stir.

Step five: Spoon the mixture onto your zucchini halves.

Step six: Bake uncovered for 25 minutes or until brown.
